Growing up, both of my grandmothers had their own special versions of macaroni and cheese. But my maternal grandmother’s was always my favorite! Little did I know, it was also the simplest of the two recipes, which is a really big deal for me as a busy mom of two little girls.
Easy Homemade Macaroni and Cheese – Ingredients
2 cups elbow macaroni
2 1/2 cups milk
3 TBS cornstarch
1 tsp salt
2 cups shredded Colby jack cheese
You start by cooking 2 cups of elbow macaroni according to the instructions on the package. Strain and let cool.
In a medium bowl, whisk together 2 1/2 cups milk, 1 egg, 1 tsp. salt and 3 Tbs. cornstarch.
Spray an 8-inch square glass baking dish with no stick cooking spray.
Layer elbow noodles, then milk mixture, then 1 cup of cheese. Repeat two more times.
Bake uncovered at 375 for 25-30 minutes or until the top starts to lightly brown. Let it sit for 10 minutes until digging in. Good luck on that one!
