My family LOVES granola but I needed to find a way to make healthy granola fast! This recipe is perfect – and you can add ingredients to make it just the way you like!
So I can’t tell you how much my family loves granola! We eat it plain, with milk and I even pre-make these super yummy yogurt parfaits with granola to help us all get out of the house on time on busy mornings!
I was getting tired of paying so much money each week for pre-packaged granola and it wasn’t even that great! So I decided it would be easier, healthier AND cheaper for me to just make my own!
I started with simple ingredients – just 6! Now you could use a blender with this but I LOVE my Tupperware Power Chef System. It’s basically a manual food processor and it is awesome. The super sharp blades pulverize almost anything but without making it into mush! I use it for salsa, homemade ice cream, hiding veggies from my kids, you name it! But a blender should work fine for this recipe as well.
I buy my pecans shelled but not chopped because they are such a better deal. My hubby doesn’t like large pieces of nuts in his granola, so I put the 1 cup of pecans in first and turn the handle a few times just to chop them a little extra.
Then I add in the 1 cup of oats, 1/2 cup sugar, 1/3 up all purpose flour, 1 1/2 TBS cinnamon and 6 TBS melted butter. Turn the handle a few times until it’s all mixed. Sometimes I add in raisins and coconut too but not tonight!
I then dump the whole mixture onto a foil-lined pan that has been sprayed with cooking spray.
Pop it in the oven at 350 for 18 minutes, stirring half way through.
Let it cool, put it in a storage container and wipe down the pan! No mess because you used the aluminum foil! Easy AND Yummy AND Healthy!
