These healthy cookie bites help keep my kids from becoming monsters when they are hungry! They are easy to make, full of healthy ingredients and best of all, kids love them!
My two girls are pretty picky eaters so when I find something healthy they love, it really makes me happy! Most all of the ingredients are good for you and it’s easy to adjust the recipe according to what ingredients you have on hand.
These are a great snack option for that busy after-school time as well!
I start with mixing 1 Cup of quick cook oats with 1 scoop of vanilla protein powder and 1/8 cup ground flaxseed.
Then I stir in 1/2 cup creamy peanut butter and 1/4 cup honey.
Once it’s a good creamy consistency, I add in 2 Tbs of mini chocolate chips and 2 Tbs mini M&Ms.
I then shape the mixture with my hands into small balls. I usually get around 14 snack sized bites from this recipe.
The end result is a great quick snack perfect for little hands.
Other great variations would be to add in raisins, nuts, or craisins!
