Fruit Salad On The Go

Eating healthy just got a LOT easier with this deliciously simple Fruit Salad On The Go!  It’s easy to make, you can be flexible with the ingredients and make it the day before!

Fruit Salad On The Go

Ah, summer…the season of making promises to eat healthier and make smarter food choices.  But then we realize how darn time-consuming that can be and we just throw the towel in and eat a carton of ice cream!

Ok, so maybe we don’t go that far.  But the truth is, as busy wives, moms and caretakers, for something to truly “work” for us, it needs to be simple and easy.  Who has time to cut up fresh fruit in the morning as we are trying to get our kids out the door to school or rushing to work or an appointment?!

Enter this delicious Fruit Salad On The Go!

The ingredients can be adjusted based on what fruit you have around as well as what’s in season.  And even better, you can make them up to 2 days ahead and they will still be delicious…I think they are even better in the fridge after a day or so because all of the fruit juices mesh together in a bite of yum!

I am a huge fan of mason jars.  I use them to make my husband yogurt parfaits every morning.  So today, I thought they would be a perfect container for this new fruit salad.

I used the pint size jars for me and my husband but the half-pint sizes are perfect for young children.

This recipe makes 2 Pint size mason jars but you can double, triple, etc as needed.

Fruit Salad On The Go

Fruit Salad On The Go – Make Ahead Recipe
1. Finely chop 1 large apple.  Split between the jars and layer on the bottom.
2. Cut up 3 clementines and add to the jars.
3. Slice 6-8 strawberries and layer in the jars.
4. Add 1/8 cup drained, crushed pineapple to EACH jar.
5. Drizzle 1/2 tsp of lemon juice over fruit mixture.
6. Top with chopped walnuts or homemade granola.

Easy and done! I cover the jars with saran wrap and grab one on the go as I’m headed out the door!
