Oreo Ice Box Cake

This Oreo Ice Box Cake is one of the easiest and yummiest desserts I have ever made!  It is perfect when you are craving a delicious combination of cool, velvety chocolate and cream.

Here in the South, the temps are soaring…99 just yesterday!  But as we all know, cookouts are a natural part of summer, but try having a “Fun” cookout when you are sweating to death!  This frozen Oreo Ice Box Cake is the perfect solution.

It’s a tradition in late July for me to host a July/August birthday cookout for Allllll the birthdays we celebrate in those two months (isn’t it funny how every family seems to have one or two months where most of the birthdays fall?!).  I had the chicken marinating and the sides all prepped but was desperately trying to think of a cool creamy dessert that would help everyone cool off.

Sure I could have opted for ice cream but that seemed a little boring…so instead I chose to make this Oreo Ice Box Cake.  It was super easy and everyone loved it!!

All you do is crush a package of oreos. I put mine in the food processor because it makes the crumbs a lot finer and more uniform.

In a stand mixer, beat 8 oz cream cheese and 1/2 cup powdered sugar until thoroughly mixed and creamy.

Fold in two 8 oz containers of Cool Whip.  Divide the mixture in 1/2.  (Easy tip – I fill one 8 oz tub of Cool Whip with the mixture so I know I have split it evenly).  Put 1/2 in the fridge and leave the remaining 1/2 out.

In a large bowl, mix the 2 packages of pudding with 4 cups of milk.  Into the pudding mixture, fold in the 1/2 of cream cheese mixture you left out.  This combo is amazing….like eating chocolate velvet!!

In a 9×12 pan, pour the pudding mixture evenly.  Top with 1/2 of the crushed Oreos.

Drop spoonfuls of the remaining cream cheese mixture over the cookie crumbs.  Spread evenly.

Top with remaining crushed Oreos.  Cover with Glad Press N Seal and then with aluminum foil (I like to keep ANY weird smells out of my food!).

Freeze overnight.  Then slice and enjoy…

Ingredients
1 package Oreo Cookies
1/2 cup powdered sugar

(2) 3.4 oz chocolate pudding mixes
4 cups milk

7.  Drop spoonfuls of the remaining cream cheese mixture over the cookie crumbs.  Spread evenly.
8.  Top with remaining crushed Oreos.
9.  Cover with Glad Press N Seal and then with aluminum foil.  Freeze overnight.  Then slice and enjoy…

      Debby I’m so sorry I left that out! It’s instant pudding…the easier the better in my world! LOL! Hope you love it as much as we do!

    Anyone know what the equivalent of cool whip is here in Australia?

      Janelle you could also make your own homemade whipping cream using heavy cream. I’m sad for you that Australia doesn’t carry Cool Whip!!!
